reese cup muffins

Classes are done for the semester!
And finals are coming to a close as well.
One of my classes had a potluck on the last day of class.
I signed up for dessert and brought these bad boys.
They were a hit and everyone LOVED them.
I don't know quite how to explain them...
Cake/cookie/muffin.....?
They are so soft, gooey, chewy...
All of those wonderful things that you want in a dessert.
Without further ado, here it is.

Ingredients:
1/2 C. peanut butter
1/2 C. chocolate chips
1 Pkg. white or yellow cake mix
2 eggs
1/3 C. canola oil

Stir all the ingredients together.

Pour into muffin tins and bake at 350 degrees for 15-20 minutes.

This makes about a dozen muffins.

Enjoy!

potato fries

As a college student I like foods that are easy to make when I get home from classes.
They have to be delicious too.
These potato fries are exactly that.
My roommate and I love them and have gone through so many potatoes and bottles of ketchup.

Your ingredients include potatoes, olive oil, and salt.
I have found that using three medium sized potatoes is perfect for two people.

First, after washing the potatoes, cut them into slices.

Next, let the slices soak in water for about five minutes.

After patting them dry, toss them with 1 Tbs. olive oil and as much salt as your little heart desires.
Spread them on a pre-greased pan.
Put them in the oven (set at 450 degrees) for around 30-40 minutes.
They should be golden brown when done.

When you are done these fries make perfect snacks or sides to meals.

Enjoy!

happy birthday

I LOVE my birthday.
It is seriously my favorite holiday.
Last year I made my roommate throw me a surprise birthday party.
That's how much I love my birthday.
Even though I was stuck on campus for 14 hours,
This year was no disappointment.
I spent the time between classes hanging out with friends.
I mixed into the day a bruise on the eye courtesy of my laptop.
I ended the night with ice cream.
And I woke up the next morning to a few armfuls of saran wrap.
Blair's birthday present to me was wrapping me into my apartment and out of my car.
Karma is on the first train into town.

model much?

Tami wore a really cute outfit.
So, naturally I decided to host a photo shoot.
She complied and was a champion model.
She embraced her inner Sydney Poulton charmingly well, if I do say so myself.

we went on a walk

Today the weather was so beautiful that we decided to get some exercise.
Riding our bikes was out because Tami's bike has two flat tires....
So instead we decided to go on a walk and explore our little city.
There were many treasures so be found.
I couldn't believe that we have our own neon sign boneyard!
My eyes were in heaven, I mean look at these!

During this walk of ours we walked through a sticker patch.
It was awful.
As we were cleaning our shoes off Tami scraped hers on the sidewalk.
Me, not noticing, sat right on that pile of stickers.
This was followed promptly by me screaming that stickers were stuck in my butt.
I would highly suggest not sitting in a pile of pokey objects.
It was very similar to sitting on a cactus-very unpleasant.

We also found a beautiful butterfly.
(Blair, I did not kill it....)

So my Friday was pretty good....how was yours?

why i don't sing...

If I could have any talent in the world it would be to sing.
My dream has always been to sign up for a talent show or other event.
I would walk out and start singing and everyone would be blown away.
That dream was crushed in ward choir.
This was many years ago, mind you....
Maybe having sang duets with Taylor Swift all these years has helped?
So here's the story:
I was singing in ward choir singing my pretty little heart out.
After the song the director said we need to try it again because she was hearing something weird...
I got REAL nervous all of a sudden.
So when we sang it again I just mouthed the words.
This time after the song the director got a 'lost-in-thought' look on her face and said:
"Well that's weird....the weird sound is gone...."
And that, my friends, was the last time I sang in ward choir.

So when I found these girls on the tube of you I immediately became jealous.
These videos have been on repeat for the last two days.
I want to be them when I grow up.
Enjoy!

conference weekend

This weekend we got to listen to our prophets speak to us.
It was wonderful to hear and feel the Spirit.
Between sessions we decided to have us a grand ol' time.
Today I went with some friends (Tami, Jordan, Quinn, and Kyle) on an adventure.
Our first stop was in the smallest town there is...Panguitch.
The movie theater was the size of somebody's house.
Whilst here, we watched a session of conference and ate lunch.
We also played some basketball and let me tell you....
If that was a real game we would have had an insurmountable amount of fouls called on us.
It got a little violent.
We headed up to Bryce Canyon after these shenanigans and tried to find us a hike.
I was doing the navigating and.....we ended up all the way at the end of the park.
We decided it would suffice and got out.
And let me just tell you...
The view was AMAZING!

Reds and greens everywhere!
It was like Christmas for my eyes.
Me and Tami led the hike and for whoever knows us knows this is not a good idea.
We chose the most deserted trail in existence.
It was covered in snow that we had to tromp through and many of us fell victim to wet bottoms.

We sang a LOT of Disney songs on this hike and rolled logs down hills.
This is what everyone does on hikes right?

The trail that we chose (Under Rim Trail) led us to lookouts with breathtaking views.
It was also going to lead us to the end of the earth-there was no end in sight.
So after about a mile we knew we had to turn around so we didn't get lost.
We didn't get attacked by any mountain lions (Jordan) so I would say it was successful!

a blog

I suppose I will hop on this band wagon.
Maybe this will hold me accountable to actually doing something with my life.
We will see how this goes I guess.
